Veggie Might HOW Old Is That Oatmeal When to Clean Out the Pantry

Written by the fabulous Leigh, Veggie Might is a weekly Thursday column about all things Vegetarian.

Last week, I came across an article in Slate, Ignore Expiration Dates, which claims that product dating is arbitrary and can largely be ignored. Since there are no food industry standards for “sell by,” “best by,” and “use by” dates, and because storage conditions will vary wildly, consumers are wise to use their judgment when deciding what to eat and what to toss.

Ignoring the “best by” date is something I do regularly. I tend to trust my nose and taste buds when deciding when food is past its prime, particularly with leftovers. It may seem reckless, but I seldom buy perishable food with such labels: never meat, occasionally dairy, and rarely eggs. Vegetables are pretty clear about letting you know when they’re done with you.

But what about the pantry? I have a bag of jasmine rice that’s been in my cupboard for at least a year. Is it time for us to part ways? How about that ancient package of texturized vegetable protein (TVP) nuggets? I can’t remember when I bought it or the last time I used it.

I mean, after a taste test of 28-year-old rolled oats, Brigham Young researchers determined that, if stored properly (sealed container, cool, dry place), dry goods and canned goods can last for years and years, taste be damned. Good news for emergency stockpilers and promising for my rice situation.

So what’s the skinny on pantry shelf life and storage? I jumped into my InterWebShip to see what I could find.

I was initially shocked at what I didn’t find: the FDA website has no recommendations for dry goods—at least not that I could find. Meat, eggs and dairy, and fruit and vegetables are covered, but grains, nuts, legumes, and spices are sadly neglected.

Fortunately, the usual culinary suspects (and one newbie) are chock full of great information:
  • Shelf Life of Pantry Items from Slashfood provides a handy chart of basic dry goods and their life spans.
  • The Kitchn deftly handles Condiments and Expiration Dates and Vinegar: Does It Have a Shelf Life?
  • The grand dame herself, Martha Stewart, gives up a Kitchen Chart of baking staples.
  • StillTasty kicks it with a comprehensive shelf life database. Just enter the food item that concerns you and get the life span and storage suggestions.
In a nutshell (4 months; longer if rigerated), dry good shelf life is less about spoilage that will make you ill and more about maintaining nutritional density and flavor. Following these storage basics will extend the life of your pantry goods and save you money:
  • Cool, dry location: vital. Pantry items should be kept between 60° and 70° F
  • Air-tight containers: important. Storing food in jars and canisters with tight-fitting lids increase the mileage of your goods.
  • Refrigeration/freezing: helpful. The oils in nuts and flours can turn rancid over time. Refrigeration stabilizes the oils and slows the aging process.
So what about my rice and TVP? Well, according to StillTasty, because I’ve kept my rice sealed and away from heat, it will last indefinitely. TVP lasts about a year in a sealed container, but I’m pretty sure it would sustain the roaches through the nuclear winter. If I don’t use it in a month, it’s getting the heave-ho. There is no room in my pantry for emergency insect food.

What is travelers diarrhea the truth about diarrhea

Travelers’ diarrhea is often used as a generic term  for any illnesses ranging from an upset tummy to  loose stools during or after travel. It could mean just excess gas, or a variety of symptoms that can occur from a change in the types of food or beverages we are used to – or, most commonly, to contamination of food or beverages. And its not just food and beverages. Touching your mouth or nose with contaminated hands may be all it takes.
How can I prevent travelers diarrhea?

People often discuss the importance of care in selecting "safe" foods and beverages for consumption. We recommend that foods be freshly cooked and be piping hot; such foods are safer than those on a buffet that have been sitting out for hours. Water should be bottled and sealed, or boiled. Alcohol is OK, but ice cubes are not.

Can medications prevent travelers diarrhea?

Yes. Pepto-Bismol has been used for a number of years to prevent travelers diarrhea. Studies show that if adults take the equivalent of two tabs four times a day, it can decrease the incidence of travelers’ diarrhea up to 60%.

Now, many people who take that amount of Pepto-Bismol end up with severe constipation. I take two tabs twice a day when I go into a risky situation. I do believe that it is very helpful, but most recommend if you’re going to do this, that it should just be for short-term -- up to three weeks.

While this helps many people, those allergic to aspirin cannot take it. And if youre taking prescription medications, you should check with your doctor to see if you can take this.

Some swear by probiotics like lactobacillus for preventing travelers diarrhea. But studies of this strategy in limited numbers of subjects are inconclusive.

And some people are given prophylactic antibiotics, which are very effective in preventing travelers diarrhea, but the problem there is we dont feel very good about prescribing antibiotics for a number of reasons for someone if they don’t need them. There are issues such as side effects, or of diarrhea caused by the antibiotics themselves, and increased antibiotic resistance in the normal organisms we harbor in our bodies. Rarely, if it is just for a very important weekend, or occasionally for government officials or someone in an athletic competition, we may prescribe preventive antibiotics.

How can a change in diet trigger travelers diarrhea?

Its due to eating different kinds of foods, such as much more spicy food or more fat than in our normal diets. That is not something we typically pay as much attention to avoiding when we travel, but we have to be wary of these things. Not every change in our bowel habits is due to infection. Infection is the most important cause of travelers diarrhea and most is caused by bacteria.
Who is most likely to get travelers diarrhea?

Some people are more susceptible than others, its not clear why that is. You can be with a group and all consume the same thing, and some get sick while others do not.

There are a host factors involved. Stomach acid is our first defense mechanism against organisms that we ingest. Theore, those on antacids, or who just have low stomach acid, often get travelers diarrhea more easily. People who have underlying diseases of the gut, such as Crohn’s disease or AIDS, may be more susceptible to certain types of organisms causing travelers’ diarrhea.
What kinds of infection cause travelers diarrhea?

For the most part, were talking about bacterial infections. Almost 90% of travelers diarrhea cases are caused by bacteria. The enterotoxigenic E. coli [ETEC, strains of common bacteria that produce a toxin affecting the gut] are most important cause. And then there  are others such as salmonella, shigella, campylobacter, vibrio, and others that are less common.

Travelers diarrhea may also be caused by viruses, such as norovirus, which is in the news a lot because of how quickly it can spread through a cruise ship.

Parasitic travelers diarrhea is yet another kind. Giardia intestinalis is the most common of these, but there is a large number of parasites that can cause diarrhea. These are less frequent.
Aside from the obvious, how do you know youre coming down with travelers diarrhea?

Sometimes it starts with fever and chills. You may get cramps, and then, of course very urgent loose stools in various amounts. Sometimes there is vomiting or bloody diarrhea. With norovirus, onset can be sudden, and vomiting is a much more prominent feature.

For bacterial and viral travelers diarrhea, the incubation period is typically six to 48 hours after infection.

For protozoan travelers diarrhea, there is usually more of a gradual onset with a few loose stools  per day and increased gas and nausea. The incubation period can be one to two weeks.
What is the main treatment for travelers diarrhea?

Hydration is the primary treatment. Often people with a bout of travelers diarrhea feel so weak. A good deal of  it is due to dehydration. Its not OK just to take a few sips of cola. You need to make the effort to drink a lot of fluid, because often youve lost a lot more than you think. In a lot of cases, just clean water is OK. Better, if you are very dehydrated, is a rehydration solution. Rehydration packets are a great thing to have, especially if you are going to remote areas or places off the usual tourist paths.

What antibiotic should I take for travelers diarrhea?

It depends. For adults, ciprofloxacin is used most commonly. Sometimes, for those traveling to certain places in Southeast Asia, where bacterial pathogens have increased resistance, some doctors like to prescribe azithromycin. In some cases where you feel that the traveler may likely be exposed to just the coliform pathogens such as E. coli, some prescribe rifaximin.

Of course, antibiotics work only for bacterial causes of travelers diarrhea. Know that even bacterial travelers diarrhea usually gets better without antibiotic treatment, although rehydration is always advised and symptoms may take 3 to 5 days or more to subside without treatment.

For those with diarrhea due to parasitic infections, there are agents that are specific for each type of infection. However, for Giardia infections, tinidazole [Tindamax] is often prescribed and is very effective.

All of this advice applies to adults. What about children?

Kids can become dehydrated far quicker than adults. Rehydration solutions are more important for children right from the outset.

Doctors are now becoming more open to prescribing antibiotics that children can take in case they get travelers diarrhea. Azithromycin can be useful in children. Parents should check with their pediatricians before leaving home.

Nursing mothers should continue to breastfeed. The time to wean a child is not in the middle of travel. Continue even if the mother has diarrhea -- but she must ensure that she is getting plenty of hydration.

Limiting Fructose is Key to Weight Loss Cancer Prevention

The link between fructose consumption and many forms of cancer are quite evident, as this form of sugar derived from fruit provides fuel to cancer cells, causing them to divide and proliferate. Fructose is an inexpensive sweetener used in many processed foods and drinks, and is most frequently found in its super-charged form, high fructose corn syrup. You can dramatically lower your risk for developing many of the most deadly types of cancer as you naturally lose weight by diligently reading nutrition labels to eliminate fructose from your diet.

Fructose Promotes Cancer Proliferation
For some time, medical researchers have known that sugar in the form of glucose is the main energy source which cancer cells use to initiate. Information published in the journal Cancer Research shows that cancer cells use glucose and fructose in different ways to fuel growth, and fructose specifically provides the mechanism which leads to cellular accelerated proliferation and metastasis. They conclude that restricting both glucose and especially fructose are essential to cancer prevention and controlling existing disease.

Metabolic Syndrome and Excess Weight Blamed on High Fructose Diet
Its no secret that waistlines have been expanding at disproportionate rates over the past half century, and volumes of scientific evidence now point to the primary suspect in this epidemic, fructose. Our body metabolizes fructose differently than glucose, and doesnt trigger the same insulin response compared with sugar or simple carbohydrates.

Our appetite hormones, leptin and ghrelin are thrown off balance and dont register fructose calories as energy consumed, meaning were much more inclined to keep eating. As this process continues over the course of many years, it leads to insulin resistance, metabolic disorder and contributes to the rising rates of obesity experienced by many unsuspecting people.

Fructose Consumption Increased Five-Fold over the Past 100 Years
A century ago, the average daily consumption of fructose was around 15 grams, a far cry from the typical 73 gram dose we receive today. More importantly, the small amount eaten by our ancestors was largely from fruit, where the fructose is bound to fiber and isn’t released to the bloodstream as quickly. By contrast, today we consume mostly high fructose corn syrup which has been artificially produced in a laboratory, and exerts a much higher degree of metabolic dysfunction in this ultra concentrated form.

Reduce Fructose to Avoid Cancer, Assist Weight Loss
Food manufacturers have been using high fructose corn syrup in ever increasing quantities as an inexpensive sweetener for the past 40 years, with obesity levels and fructose sensitive cancers increasing in linear proportion. The only way to purge this unnatural poison from your food supply is to carefully read every nutrition label for the presence of corn syrup, high fructose corn syrup and the newly coined marketing term, corn sugar. Avoid any sweetened soft drinks and especially fruit juices, as well as all processed or prepared foods. You’ll find fructose in one of its many forms in virtually every type of food which has been manufactured for mass consumption.

Excess dietary fructose has been shown to contribute to metabolic dysfunction, increased abdominal fat storage and the proliferation of many forms of deadly cancers. Individuals who know they are insulin resistant, pre-diabetic or have been diagnosed with cancer should drastically limit fruit intake and eliminate high fructose corn syrup entirely. Health conscious individuals will want to carefully monitor the amount of fructose they eat to avoid the significant health concerns attributable to this simple fruit sugar.

5 reasons why walking is better than running

5 reasons why walking is better than running - According to one study, walking is actually as healthy as running. Because both are able to relieve stress and cholesterol, as well as lowering the risk of heart disease and diabetes.

Immune system

Walking health benefits in the long run. Because if the runners high risk of infection, the immune system does not harm feet. Not only that, run a marathon too risky to burn fat as well as muscle tissue. Thats what ultimately makes the bodys immune system weakened and susceptible to disease.

Heart health

For people who have a weak heart condition, running is not a sport that is suggested to them. Because running can actually be harmful to heart health. But the weak of heart patients can still benefit by way of foot health.

Joint

There are many cases of injuries suffered by athletes runners. They also often suffer from inflammation at the joints, such as the legs, hips, and other joints. Because running is reducing the lubricant which is located at the joints of the body. But the same thing will not happen to someone who often walk alone.

Cartilage

In addition to joints, cartilage is also most at risk of degradation due to run in the long term. Therefore, it can be said that walking is actually better than running.

Heat shock

Running is not advisable to do so in the hot weather. Because there is a high risk of a person exposed to heat shock conditions. Although walking in broad daylight also have the same risk, but the risk is much lower than with running.

This is Oral Bacteria Cause Heart Disease

This is Oral Bacteria Cause Heart Disease | There are many bacteria that live in our mouths, one of which is Streptococcus Gordonii. A recent study found that, the bacteria Streptococcus Gordonii into the blood stream can cause blood clots and lead to endocarditis (inflammation of the lining of the heart).

Thus the results of the presented research by scientists from the Royal College of Surgeons in the Society for General Microbiologys Spring Conference, Dublin Ireland this week.

Streptococcus Gordonii is a type of bacteria in the mouth and has contributed in the formation of plaque on tooth surfaces. If the bacteria enter the bloodstream through the gums are bleeding, they will wreak havoc by posing as a human protein.

Researchers from the Royal College of Surgeons, Ireland (RCSI) and University of Bristol have found that S. Gordonii is able to produce molecules that mimic human proteins fibrinogen, and cause clots in the blood vessels. Platelet clumping can cause endocarditis, or inflammation of blood vessels that can block the blood supply to the heart and brain.

Dr Helen Petersen, said, with a better understanding of the relationship between bacteria and the risk of blood clots, it can help especially in the treatment of infective endocarditis do. Infective endocarditis is an infection of the heart valves, which are usually caused by bacteria.

"About 30 percent of people with infective endocarditis will die and most require heart valve replacement surgery who have been infected, with valves made of metal or animals," says Dr. Petersen.

"Our team has now identified the components of S. Gordonii molecules that mimic fibrinogen, so we are getting closer to be able to design new compounds to block it. This will prevent the stimulation of unwanted blood clots," continued Dr Steve Kerrigan from the RCSI.

In addition, researchers were also more extensively studied other bacteria in dental plaque that may have an effect similar to S. Gordonii. "We also try to study the properties of other bacteria that have a relationship with S. Gordonii. Our findings clearly show how important it is to maintain oral hygiene and dental hygiene by brushing teeth regularly," said Dr. Petersen.

Mostly people with HIV AIDS is a Youth and Young Adult

AIDS stands Acquered Immune Deficiency Syndrome. AIDS is a disease that can not find a cure until now. The disease attacks the human immune system, making people more susceptible to disease. The disease is caused by the HIV virus. HIV stands for Human Immuno Virus. This virus attacks the CD4 lymphocyte cells in the human body that acts as the bodys defense system from infection. As a result, the immune system is down and susceptible to infection. The virus is transmitted in the event of mixing body fluids containing HIV, through sexual contact with someone who has HIV, through blood transfusions and organ transplants contaminated with HIV through needle sticks or other equipment contaminated with HIV, and the removal of the pregnant women who suffer HIV to her fetus.

HIV / AIDS has spread rapidly. This disease 20 years ago was not known at all, but is currently estimated at more than 60 million people are infected and more than 21 million people die from it. On average, every day there are 14 thousand people are infected, most are adolescents between 15-24 years of age. AIDS has become the fourth largest cause of death worldwide.

Estimates nationally by the Ministry of Health in 2002 the number of people living with HIV / AIDS in Indonesia is around 90-130 thousand. However, the recorded and reported only about 6000 people since 1987. Until now in Indonesia has found many cases of HIV / AIDS whose numbers tend to increase from year to year. Most cases of HIV / AIDS in Indonesia successively found in Jakarta, Papua, East Java, West Java, Bali, North Sumatra, West Kalimantan, North Sulawesi, Riau and Riau Islands. While the age group most commonly found cases of HIV / AIDS is a young adult age group is aged 20-29 years, followed by 30-39 years in a row, 40-49 years and 15-19 years. According to the type of transmission of HIV / AIDS was found in IDUs (Intravenous Drugs Users), followed by heterosexual couples, homosexual transmission during birth, blood transfusions and others. Currently, Indonesia is no longer classified as a country with a low prevalence of infection, but it is an increase in the status of a concentrated epidemic.

The factors that led to the rapid increase of the epidemic in Indonesia is the highest among other drug use with needles that are not sterile, improvement or expansion of the sex industry serving 7-10 million customers every year and the lack of condom use by sex workers subscribers. If not immediately addressed then, HIV / AIDS will quickly negate the progress of development that has been achieved during this nation.

HIV / AIDS cases reported are just a tip of the iceberg, in which case the surface or the note is only a fraction of the truth. If we review the number of cases by age group is the most at a young age is the age of 15-49 years with the highest is 20-29 years of age. Is Eating Star Fruit Dangerous

Star fruit (also known as carambola) is a tropical fruit that traditionally comes from a tree (Averrhoa carambola) native to Sri Lanka and the Moluccas (also known as the Spice Islands), an archipelago in Indonesia. It is now grown in Florida and Hawaii, as well as in Southeast Asia and Malaysia. The name star fruit comes from the fact that when sliced, the cross section has the shape of a five-pointed star.

Star fruit can be yellow to green with a complex flavor that may be tart or sweet, combining flavors of pineapples and lemons.

If you have no kidney problems, you can eat all the star fruit you want - it has no effect on healthy kidneys. But if your kidney function is impaired, eating star fruit can be very dangerous, even deadly. Symptoms of "star fruit intoxication" include persistent hiccups, nausea, vomiting, agitation, insomnia, mental confusion and convulsions that occur within one to five hours of eating the fruit.

The problem seems to be the high levels of oxalic acid (or oxalate) in this fruit that can accumulate in weakened kidneys. But since kidney patients dont seem to have problems eating other oxalate-rich foods (such as spinach), Brazilian researchers who have been studying the reaction suggest that another, unidentified substance toxic to nerves is the real culprit. Whatever this toxin may be, people with healthy kidneys have no problem excreting it while those with impaired kidney function run into trouble with the combination of the unknown toxin and oxalate. The only way to deal with star fruit intoxication is prompt dialysis – so anyone who does have kidney problems and develops hiccups, vomiting or other symptoms after eating star fruit should get immediate medical attention.

Star fruit intoxication can develop in patients with kidney failure after eating as little as one half of a fruit or drinking less than eight ounces of star fruit juice. In one case, a patient with impaired kidney function died after eating just a single star fruit.

Kale is a rich source of organosulfur compounds, which is great at fighting many cancers, especially colon cancer. In other research, sulforaphane from Kale has been shown to have a more direct effect on cancer prevention, especially in colon cancer, inducing cancer cells to destroy themselves. This was seen in a recent study in which animals were genetically bred to develop intestinal polyps, a condition that leads to tumor formation. This group of animals was then fed sulforaphane and found to have higher rates of apoptosis (cell suicide) and smaller tumors that also grew more slowly than animals who received no sulforaphane.
  • Weight Loss 100 (100%)

  • Heart Disease Prevention 34 (34%)
  • In Kale research, the benefits of lutein also extend to prevention of atherosclerosis. An 18-month study from the University of Southern California found that in a group of 480 men and women aged 40 to 60 with no history of heart disease, those with the lowest serum lutein concentration had a five-fold greater increase in carotid artery thickness, a risk factor for heart disease, compared with those who had the highest serum lutein concentrations. This study also included an in-vitro portion, which compared tissue cultures of cells exposed to various combinations of lutein and detrimental, low-density lipoprotein (LDL), which is known to promote atherosclerosis. The researchers found that pretreatment of cells with lutein dose-dependently protected the cells against inflammation associated with LDL plaque formation, again confirming lutein’s protective effect against atherosclerosis.
  • Reduce Inflammation 6 (6%)
