Star Fruit

The star fruit or carambola is a tropical fruit that is gaining popularity in the United States. This fruit acquired its name from the five pointed star shape when cut across the middle of the fruit. It has a waxy, golden yellow to green color skin with a complicated flavor combination that includes plums, pineapples, and lemons.

Originally from Sri Lanka and the Moluccas, and cultivated in Southeast Asia and Malaysia for several hundred years, this fruit also goes by many other names including: bilimbi, belimbing, Chinese star fruit, five-angled fruit and the star apple. Today, star fruit flourishes in south Florida and Hawaii because the fruit thrives on growing in a warm environment. Two types of star fruit are grown, tart and sweet. Tart varieties typically have narrowly spaced ribs, while sweet varieties tend to have thick, fleshy ribs. The tastes between the two are hardly distinguishable, as the tart variety still has some sweetness. This tropical fruit is readily available July through February.

Star fruits are an excellent source of vitamin C, is low fat, and naturally sodium and cholesterol free. A small whole star fruit will provide approximately 2/3 cup sliced.



Selection
Select firm, shiny skinned, even colored fruit. Star fruits will ripen at room temperature and have lightly brown edges on the ribs when it’s ripe. Avoid purchasing star fruit with brown, shriveled ribs. This delicious fruit is also available dried.

Storage
Non-ripe star fruit should be turned often, until they are yellow in color and ripe with light brown ribs. Store ripe star fruits at room temperature for two to three days or unwashed, and refrigerated, in a plastic bag for up to one week.

Preparation
Star fruits are great to eat out of hand as these tropical delights do not need to be peeled or seeded before eating. Simply wash the fruit, remove any blemished areas, cut crosswise to get the star shape, and eat!

Grow a Star Fruit Tree

The carambola or star fruit, a medium-sized tree, enjoying a delicious fruit in the world produces. This tree is native to tropical regions like India and Indonesia, but can, in many parts of the world are grown. States like California and Florida, the trees often grow because of warmer temperatures. The carambola is a welcome addition to any garden or home.

A seed in full sun. These trees are tropical and need plenty of sunlight. It can grow in any soil, even if acid soil is best for optimal growth and good drainage is necessary.

Add fertilizer. It is a slow growing tree, so the fertilizer can help grow fruit faster and better.

Slice and Eat a Star Fruit

CHOOSING THE RIGHT STARFRUIT

Seeing a star fruit (or starfruit) in the grocery store can be a little intimidating or seem ‘too exotic’ if you’ve never sliced and eaten one your self, but don’t be scared, it’s delicious and easy. The best looking star fruit may not be the most ripe and delicious, so choosing the right one is important. Your best bet is to find the fruit with the least amount of green on the edges and the richest orange color. This could mean there are some brown edges, but if they are small, that indicates it’s at its optimum ripeness.

I have tried buying green star fruit and letting them ripen to a bright orange color, but they are always much more bitter than finding the fruit at the stand that has spent more time ripening on the tree. It really is hit or miss, so if you find a good source for them, stick with it. In Costa Rica there is a farmers market in the Pavas area of San José that has a lot of stands with star fruit, which they call carambola, but we have our favorite of course. You can find the market extending down about 500 meters along the street running beside the Palí in Pavas every Saturday morning.

A great way to use star fruit that I’ve noticed here in Costa Rica is to juice them and combine with sugar and cinnamon for a sweet little cocktail. If you then take the juice and blend it with ice, it’s even better for the summer.

HOW TO SLICE A STARFRUIT

1. First choose the best, most ripe starfruit with slight green edges and rich orange color

2. Using a sharp butcher knife, slide the blade down the green edges of the star fruit being careful only to remove the non-orange edge.

3. Once the edges are removed, slice off the two ends. Only remove about 1/2 inch, not too much. At this point your fruit should have no more green or brown areas.

4. Next, slice the trimmed starfruit across the broad side, into star shapes about 1/4 to 1/2 inch thick

5. You’ll notice that your slices have seeds in them, mostly in the middle pieces. These should be removed with the tip of the knife.

6. Star fruit is a very fun-shaped fruit, so get creative with how you plate it. It also makes a great garnish, and in Costa Rica (in Spanish is called ‘carambola’) they are plentiful and cheap. They are a great snack with a little sprinkle of cinnamon, as a juice drink, or to use in salads. They are versatile, so find your favorite way to use them and enjoy!

ADDING STARFRUIT TO YOUR DIET

You can add star fruit to your diet in a variety of ways. My favorite is in a fruit salad, but it is also a great compliment to a green garden salad or a chicken dish that uses coconut. Anything dish that combines sweet and savory is a great one to garnish with starfruit or use within the recipe.

Here are a few starfruit recipes to get your started:
Starfruit, Orange and Mango Smoothie

serves 4

INGREDIENTS

• 3 Cups of fresh orange juice
• 3 Ripe starfruit, trimmed and de-seeded
• 4 slices of starfruit, trimmed and de-seeded
• 1 mango peeled, pitted and cubed
• ½ tsp ground cinnamon
• 1 Tablespoon of honey (optional)
• 2 Cups of ice cubes.

DIRECTIONS

Combine all ingredients in a blender and blend on high until smooth. Pour into 4 large juice glasses and garnish each with a star fruit slice. Serve immediately.

Herbed Green Salad with Starfruit

INGREDIENTS
• 1/4 cup sliced almonds
• 1 head romaine lettuce, leaves torn (6 cups)
• 1 cup fresh parsley leaves
• 1 cup fresh cilantro leaves
• 10 chives, chopped
• 4 to 5 tablespoons Italian vinaigrette

DIRECTIONS


1. Heat oven to 400° F. Spread the almonds on a rimmed baking sheet and toast, tossing occasionally, until golden, 5 to 6 minutes.
2. In a large bowl, toss the lettuce, parsley, cilantro, chives, and almonds with the vinaigrette.
Coconut and Starfruit Baked Chicken

INGREDIENTS


* 4 boneless, skinless chicken-breast halves
* 2 garlic cloves, minced
* 1 teaspoon crushed red pepper flakes
* 2 cups uncooked jasmine rice
* 1.5 cups chicken stock
* 1 14-ounce can coconut milk
* 1/4 cup fresh cilantro leaves
* 1 teaspoon salt
* juice from 2 starfruit (clean and de-seed fruit, blend and strain)
* 1 starfruit sliced into thin stars
* 1/2 cup flaked sweetened coconut

DIRECTIONS


1. Heat oven to 325° F. Lightly coat a 13-by-9-inch baking dish with vegetable cooking spray. Sprinkle the chicken breasts with the garlic, cayenne, and lime zest; set aside.
2. Place the rice in the baking dish. Combine the chicken stock, coconut milk, cilantro, salt, and starfruit juice and pour onto the rice. Arrange the chicken on top of the rice. Cover with foil and bake 25 to 30 minutes or until the rice is tender and the chicken is cooked through.
3. Remove the foil, sprinkle the coconut on top, and cook 5 minutes more or until the coconut is browned. Dish out and serve with starfruit garnish.

Buy a Star Fruit

Carambola or star fruit is a fruit of Southeast Asia to be a delicacy and a colorful Asian, salads and desserts. Star Fruit Origins

The carambola or star fruit has many names as sources. It is an evergreen tree with fruit production of low ash in the form of a gold star. Star Fruit Steak

Ingredients
    * 1 1/4 pounds beef sirloin steak
    * 1/3 cup Worcestershire sauce

Directions
   1. Place the beef sirloin steak in a medium dish and cover with Worcestershire sauce. Sprinkle with ground black pepper and seasoning salt, adjusting the amounts to taste. Place star fruit slices around the steak. Cover and marinate in the refrigerator approximately 4 hours, turning steak once.
   2. Preheat an outdoor grill for high heat and lightly oil grate.
   3. Cook steak 3 to 5 minutes per side on the prepared grill, or to desired doneness.

The only way to deal with star fruit intoxication is prompt dialysis – so anyone who does have kidney problems and develops hiccups, vomiting or other symptoms after eating star fruit should get immediate medical attention.

Star fruit intoxication can develop in patients with kidney failure after eating as little as one half of a fruit or drinking less than eight ounces of star fruit juice. In one case, a patient with impaired kidney function died after eating just a single star fruit.

Im sure you know that the most common reason a fruit should be avoided is because of potassium. The citrus/tropical fruits are especially high in potassium. A great dietitian I worked with had a great philosophy that there isnt anything you cant have, just things you might only be able to have in small portions or infrequently. My recommendation would be to only have a small amount, like one or two bites, just before dialysis. Make that just about your only potassium foods for the day, and youll probably be okay. Be sure to NOT do this just before your labs get drawn (because it will throw them way off) and dont do it over the weekend, when your potassium will be built up to its highest level. I would recommend double-checking this advice with your dietitian.

Lay on waxed paper or stick the toothpicks into styrofoam and put in the fridge till the chocolate is set. This works for most kinds of fruit.

Almost any decent fruit store. In season in NY about November. or heck out asian grocery markets. star fruits only come on specific seasons though. you might have to ask them when they will come.

Star Fruit Recipes Part 4

Star Fruit Salad with Raspberry Vinaigrette
  • 1/3 cup raspberry vinegar

  • 1/4 cup salad oil

  • 2 tablespoons honey

  • 2 10 ounce packages torn mixed salad greens; Italian blend

  • 2 medium star fruit, thinly sliced

  • 1 small red onion, thinly sliced


Combine vinegar, oil and honey in a screw top jar. Cover and shake well. Toss salad greens with star fruit and onion in a large bowl. Shake dressing well and pour over salad mixture. Toss lightly to coat well. Makes 12 servings.

Fruit Exotica

  • 1/3 cup orange juice

  • 3 tablespoons cream of coconut

  • 1/2 teaspoon pure almond extract

  • 1/2 teaspoon curry powder

  • 1 cup reduced fat sour cream

  • 2 mangoes, cubed

  • 4 star fruit, sliced

  • 1 cup blueberries

  • 2 cups strawberries, chopped

  • 1 1/2 cups orange sections


In a large bowl, mix together orange juice and the following four ingredients with a spoon. Set aside. Add prepared fruit to dressing and toss thoroughly. Cover and refrigerate several hours or overnight. Serve on leaf lettuce as a salad, top slices of pound cake or fill a crepe for dessert. 8 servings.

Vietnamese Grilled Steak Wraps
  • 1 1/2 pounds beef flank steak

  • grated peel of 2 lemons

  • juice of 2 lemons

  • 6 tablespoons sugar, divided

  • 2 tablespoons dark sesame oil

  • 1 1/4 teaspoons salt, divided

  • 1/2 teaspoon black pepper

  • 1/4 cup water

  • 1/4 cup rice vinegar

  • 1/2 teaspoon crushed red pepper

  • 6 8 inch flour tortillas

  • 6 lettuce leaves

  • 1/3 cup fresh mint leaves

  • 1/3 cup fresh cilantro leaves

  • star fruit slices

  • red bell pepper strips

  • orange peel strips


Cut beef across the grain into thin slices. Combine lemon peel, juice, 2 tablespoons sugar, sesame oil, 1 teaspoon salt and black pepper in a medium bowl. Add beef; toss to coat. Cover and refrigerate at least 30 minutes. Combine water, vinegar, remaining 4 tablespoons sugar and 1/4 teaspoon salt in small saucepan; bring to a boil. Boil 5 minutes without stirring until syrupy. Stir in crushed red pepper; set aside. Remove beef from marinade; discard marinade. Thread beef onto metal or wooden skewers. Soak wooden skewers in hot water 30 minutes to prevent burning. Grill beef over medium hot briquets about 3 minutes per side until cooked through. Grill tortillas until hot. Place lettuce, beef, mint and cilantro on tortillas; drizzle with vinegar mixture. Roll tortillas to enclose filling. Garnish with star fruit, bell pepper and orange peel strips. Makes 6 wraps.

Grilled Lemongrass Prawns
  • 16 king prawns or 24 medium prawns, heads and shells intact

  • 1/4 cup sugar

  • 1/4 cup fish sauce

  • 1 tablespoon vegetable oil

  • 2 stalks lemongrass, outer leaves and tough green tops removed, root ends trimmed and finely ground

  • 1 star fruit, unripe, sliced into thin stars


With a paring knife, make an incision through the shell along the back of the prawns. Devein, leaving the shell intact; rinse the prawns and pat dry. Whisk together the sugar and fish sauce in a bowl until the sugar is completely dissolved. Stir in the oil and lemongrass. Add the prawns and toss running your fingertips between the flesh and shells. Place the prawns in a plastic bag and seal the bag. Marinate the prawns, refrigerated, 2 to 3 hours, turning the bag over every 30 minutes or so. Grill over a barbecue,make sure the flames have subsided and coals are red with white ashes, or in a well oiled grill pan over medium high heat, until prawns are cooked through and turn pink, about 3 minutes per side for king prawns and 2 minutes for medium prawns. Serve with star fruit on the side.

Pork Scaloppinis with Star Fruit
  • 1 tablespoon butter

  • 4 pork cutlets, 4 ounces each

  • salt and pepper to taste

  • 1 star fruit, sliced

  • 1/2 cup beef broth

  • 1/2 cup orange juice

  • 1 cup whipping cream

  • 2 tablespoons fresh coriander, chopped

  • 2 teaspoons orange peel


Preheat oven to 200F. Melt butter in frying pan over medium heat. Cook pork about 4 to 5 minutes per side. Season with salt and pepper. Transfer cutlets to a serving dish and set aside in oven.   • 1/2 cup all purpose flour

  • 1/2 cup yellow cornmeal

  • 1/2 cup plain nonfat yogurt

  • 1/3 cup packed brown sugar

  • 2 tablespoons dark molasses

  • 2 tablespoons margarine, melted

  • 1 teaspoon lemon peel, finely shredded

  • nonstick spray coating

  • 1 large star fruit cut into 12 slices

  • 2 teaspoons granulated sugar


In a large bowl, stir together flour, cornmeal, oats, baking powder and baking soda. In another bowl stir together egg whites, yogurt, brown sugar, molasses, melted margarine and lemon peel. Add egg white mixture to flour mixture, stirring just till combined. Spray an 8 inch round quiche pan or cake pan with nonstick spray coating. Spread batter into prepared pan. Gently press star fruit slices into batter. Bake in a 350F oven about 30 minutes or till a toothpick inserted near center comes out clean. Lightly sprinkle with granulated sugar. Cool slightly in pan on a wire rack. Cut into wedges. Serve warm.

Baked Fish Fillets With Star Fruit
  • 2 tablespoons softened butter

  • 2 fairly lean fish fillets, about 1/2 pound each, about 1/2 inch thick

  • salt and white pepper to taste

  • 2 very small star fruit

  • lime juice to taste


Preheat oven to 450F. Select a baking dish to hold fillets in a single layer. Spread a little less than half the butter in the dish. Set fillets on butter. Add salt and pepper.   • 1/3 cup Worcestershire sauce

  • 1 teaspoon ground black pepper

  • 1 teaspoon seasoning salt

  • 1 star fruit, cut into 1/3 inch slices


Place the beef sirloin steak in a medium dish and cover with Worcestershire sauce. Sprinkle with ground black pepper and seasoning salt, adjusting the amounts to taste. Place star fruit slices around the steak. Cover and marinate in the refrigerator approximately 4 hours, turning steak once. Preheat an outdoor grill for high heat and lightly oil grate. Cook steak 3 to 5 minutes per side on the prepared grill, or to desired doneness. Makes 4 servings.
